  • Tallahassee is home, I am seventh-generation Floridian on both sides of my family. -A real Southerner who has defied assumptions and expectations as a professional with disabilities. If you are not challenging status quo, you must be complacent. Cain’t never could and won’t never will. We speak in euphemisms, it is with great experience, I can decode a redneck. Don’t let my education fool you, my ability to code-switch is disarming.

    The Southern diet has a poor reputation for causing cardiovascular disease. Nowadays stents are standard procedure, but not many kids get to see arterial plaque pulled out of their grandfather. Watching my Papa recover from a triple bypass and various experimental procedures made a profound impact. I’ve taught myself how to modify my Grandmothers’ traditional Southern recipes to improve health and longevity. Cooking has always been my favorite hobby and led to earning my degrees in Food and Nutrition Science.

    Pets are fundamental to my human experience. My favorite office mate is Jacques Cousteau, my 10 lbs. highfalutin Coton de Tulear! Having a dog helps me with mobility and chronic pain. It’s my experience that diet and exercise work synergistically. I enjoy walking my dog, Iyengar yoga, and weight training. I believe good health can come at any size or age. Nutrition is my philosophy of life and functional tool. I’m grateful I get to do what I love.

    • Approximation of key micronutrients.

    • If you are disappointed with the results of the dietetics calculations of your recipes and need guidance on improving nutritional value, this is next level of service.

    • Many people are on special diets or have medically necessary restrictions.

      • Certain ingredients can be a liability.

      • Designing and modifying recipes to meet medical restrictions is a special service. Dysphagia or other feeding difficulties is a tough reality.

    • Language to support menu concepts are a good marketing strategy. Nutritionist-approved is the ultimate stamp!
